Pepper jack cheese is a type of Monterey Jack cheese that is made with spicy hot peppers for flavor. Pepper jack is a spicy, buttery cheese that is soft and has a tart flavor.

Although the origins of Pepper jack cheese is undocumented, it is rumored to have been created in California in late 19th century by Mexican-American cheesemakers who created Monterey Jack cheese with Jalapeño peppers for additional flavor.[1]
