Spätzle [ˈʃpɛtslə] is the name for a common dish in the south of Germany, Austria and Switzerland. They are elongated and are made of dough. The dough usually also contains fresh eggs. Depending on the region, the dish may be called Knöpfle. The dough is boiled in hot water.

The dish is either served as a main course (with local cheese, and fried onions, called Kässpätzle), or as a side dish, usually alongside some meat.
