Born in Manchester, UK, James has worked throughout Europe, North America and the Caribbean and has mastered the flare and uniqueness of his craft of developing a vast and diverse bar menu.

His industry experience ranges from training fellow employees at TGI Friday (UK) and Living Ventures. James set up and opened the award winning Riki Tiki Tavi in Manchester UK as Bar Manager at the age of 20. After migrating to Australia he successfully participated in Sydney flair competitions, was a high end Wine Consultant and frequent writer for The Wine Society as well as previously working as the bar manager for the Tokkuri Sake Bar & Restaurant in Cammeray responsible for stocking one of Australia’s largest Sake selections.

James Carlin is the current Bar Manager of La Bodeguita Del Medio Sydney with 16 years of work experience in the international hospitality industry. As Bar Manager, James Carlin, has created a Cocktail menu that is a true reflection of the most authentic Cuban Cocktails incorporating the exclusive hand-picked 135 Rum bottles, building one of the world’s largest selection of rum (currently ranked 4th in the World).

Nowadays he is also a Rum advocate, by establishing the Rum Society to improve knowledge, educate and initiate an appreciation for rum to both the public and the hospitality industry.

James Carlin prides himself for working at La Bodeguita Del Medio the internationally famous 'Home of the Mojito'.

Apart from his obsession with rum James is a Horror movie fanatic as well as being a patriotic fan of Manchester City Football Club. He also enjoys a good cigar and loves a glass or two of Carmenere.
