It isn't difficult to read, but the topics are challenging: Politics, Alcohol, Religion, Sex, Narcotics, ~isms, and Pork. - Selected Articles from Simple English Wikipedia: Some of the Good and the Very Good is a huge collection of the articles that Wikipedia editors think are the best. These are complete, well-written, and carefully checked.
- Giant Lizards: All About Komodo Dragons is just for fun. I have always loved these creatures since I was a little kid. I suspect a few other people do, too. At least some of the authors and editors ast Oxford University Press ELT do.

It is very simple to make your own books on Wikipedia. Even better, encourage your students to make some.
