Bayonne ham (French: Jambon de Bayonne) is a type of ham from the French commune of Bayonne. It is made by curing the pork with a special type of salt from the commune of Salies-de-Béarn. It currently has protected designation of origin. The meat can only come from a special breed of pigs from small farms.
