Bayonne ham (French: Jambon de Bayonne) is a type of ham from the French commune of Bayonne. It is made by curing the pork with a special type of salt from the commune of Salies-de-Béarn.[1] It currently has protected designation of origin.[2] The meat can only come from a special breed of pigs from small farms.[1]
