Curtido is a kind of fermented cabbage relish. It is found in the cuisines of El Salvador and other Central American countries. It is made with cabbage, onions, carrots, and sometimes lime juice or vinegar. It is similar to sauerkraut or kimchi There is also a variation of curtido which is prepared with mayonnaise.

People eat curtido with pupusas.
